Ingredients:
Ingredients 130g plain flour 1 egg 1 tsp baking powder 150ml milk 15g melted butter Half a jar of sour cherry preserve from Granny’s Secret Half a bar of Vivani organic 70% dark chocolate
Method
1. Combine the flour, egg, baking powder, milk and melted butter in a blender and blitz. 2. Meanwhile heat a non-stick pan and melt a small knob of butter. 3. Drop the mixture into the pan, half way through cooking the first side, drop in a square of chocolate, then cover with more pancake mix. When firmed up slightly, flip and cook the other side entrapping the chocolate in the middle. 4. Serve up with a drizzle of the sour cherry preserve warmed in the microwave. Cut through the pancake to reveal the oozing melted chocolate square in the middle.
