Ingredients:
Ingredients 140g plain flour 1 egg 1 tsp baking powder 150ml milk 15g melted butter Tablespoon of Sicilian dried oregano 150g grated Pecorino or other Italian cheese Half a jar of Tomato Sauce with Olives 6 slices of Venison salami or other cured salami/pepperoni cut into small pieces
Method
1. Combine the flour, egg, baking powder, milk and melted butter in a blender and blitz. 2. Stir in the salami pieces, oregano and half the grated cheese. 3. Meanwhile heat a non-stick pan and melt a small knob of butter. 4. Drop in the pancake mixture and cook until light brown on each side. 5. Meanwhile heat the tomato sauce (either in a small pan or in the microwave) 6. Serve the pancakes with a drizzle of the sauce and a sprinkle of cheese and oregano on the top.
