Beef medallions marinated in coffee and red fruits

Ingredients (for 2 people)

1 sirloin beef steak weighing 400g
2 teaspoons of Manuel ground coffee
2 sprigs of fresh thyme
1 sprig of rosemary
2 sage of leaves
1/2 clove of garlic
black pepper
unrefined sea salt
evo oil as required
FOR THE RED FRUIT SAUCE:
2 dessertspoons of mixed berries
1 teaspoon of acacia honey
1 dessertspoon of evo oil
salt and pepper as required

Method

Rub the black pepper, herbs, coffee and finely chopped garlic into the meat.
Massage well, adding 2 dessertspoons of evo oil, wrap in film and leave in the fridge for a couple of hours.
Put the fruit into a small pan with the honey and stir over a low heat.
When the fruit has released most of its juice, season with salt and pepper and continue to cook, reducing the sauce until it is the consistency of a liquid glaze. Put aside.
Put a griddle, preferably cast iron, on the heat and when nice and hot, add the steak. Brown for about 2 or 3 minutes on both sides and also sear the edges.
Take off the heat, rest for 2 minutes then slice and serve with the fruit sauce and a drizzle of evo oil.
